Single Batch Water Kefir is made using organic brown sugar, and whatever takes Suzanne, the owners’ fancy that week. The finished product is 99% sugar free and intentionally dry.

Sugar is required for the fermentation process as this is what the grains feed off of. However the grains only consume a limited amount of sugar during the fermentation process and any additional sugar only goes into the finished product. The goal and style with this water kefir is for a bone dry beverage which is naturally fizzy.
If you have a sweet tooth, this will be an acquired taste.
